This is an experience that involves all of our senses, from sight to smell and taste. When tasting coffee, we can identify characteristics of the coffee plant . For example, acidity, body, sweetness and a wide range of aromas, from fruit and flowers to chocolate and spices.

Basic steps for coffee tasting

Sample preparation.

This process begins with grinding. At this stage, the coffee is ground just before tasting to ensure the freshness of the aromas.

Dosage.

An exact amount of coffee is then weighed for each of the samples to be tasted. This ensures that the comparison between the samples is fair.

Water temperature

Now the water to be added to the samples is prepared. This liquid must be at a temperature between 92°C and 96°C to extract the best flavors from the coffee.

It is time to evaluate the samples, and the following aspects must be taken into account:

  • The color of the sample can be observed, which, depending on the roasting and other factors, can vary from light gold to dark brown.
  • The density of the cream is also taken into account, whether it is fine, dense or absent.

Break the cup

When we prepare a cup of coffee for tasting, a layer of ground coffee forms on the surface. This "cap" traps many of the coffee's volatile aromas. By "breaking the cup" we can perceive a wider range of aromas and enjoy a more complete tasting experience.

This process is easily done with two spoons inserted into opposite sides of the cup. The spoons are then slowly slid into the centre of the cup, breaking up the layer of ground coffee without disturbing the bottom.

Olfactory evaluation

The smell of the sample is also taken into account at the different stages of the tasting:

  • Before pouring the water, the aroma of the ground coffee is inhaled. This is known as dry aroma.
  • Once the coffee has been brewed, the aroma that comes out of the cup is inhaled. In what is called a wet aroma, we try to identify notes such as fruity, floral, spicy, chocolate, etc.

The layer that forms on top of a cupping cup is basically a collection of ground coffee and volatile aromatics that are no longer being extracted. You have to 'break' the cup (and skim off the foam that forms afterwards) to taste the coffee underneath.

Finally, the taste of each sample at different times is taken into account:

  • It starts with the first sip. At this point, you take a small sip and move the coffee around in your mouth so that it comes into contact with all of your taste buds.
  • Next, its acidity is taken into account. The refreshing and lively sensation on the palate is evaluated.
  • Your body is then assessed. This can be light, medium or heavy.
  • In addition, the natural sweetness of the coffee in your sample is taken into account, whether it has notes of caramel, honey or sugar.
  • Specific coffee flavors are also identified, such as fruit, chocolate, nuts, etc.
  • Finally, the persistence of taste after swallowing is evaluated.

Global analysis

Once all the previous steps have been completed, each sample is summarized in the following aspects:

  • It is evaluated whether all the elements of the coffee are in balance.
