DESCRIPTION
This Specialty Coffee: Rogelio Santiz has two peculiarities:
- It was grown and harvested by the coffee master Rogelio Santiz, recommended to us by Enrique López of Finca Chelí
- A very special process (Black Honey / Carbonic Maceration)
This process consists of 2 nights of Carbonic Maceration Fermentation. The next day the cherries are pulped and lightly washed with clean water, they are taken to the patio for 3 days in direct sunlight and then they are moved to a patio with 50% shade mesh for another 25 days approximately.
